  • 4 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 small onion, finely diced
  • 2 garlic cloves, minced
  • 1 pound lean ground turkey
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • ½ cup black beans (drained and rinsed)
  • ½ cup canned corn (drained)
  • ½ cup diced tomatoes
  • ¼ cup chopped fresh cilantro
  • ½ cup shredded cheese (cheddar or Mexican blend)
  • Plain Greek yogurt or sour cream

Instructions

  1. Preheat your oven to 400°F (200°C). Wash the sweet potatoes and pierce them several times with a fork.
  2. Bake the sweet potatoes directly on the oven rack or on a baking sheet for 45–50 minutes until fork-tender.
  3. In a skillet over medium heat, warm olive oil. Add diced onion and cook for 3–4 minutes until translucent; stir in minced garlic for another 30 seconds.
  4. Add ground turkey to the skillet and cook until browned. Season with spices: smoked paprika, chili powder, cumin, sea salt, and black pepper.
  5. Mix in black beans, corn, and diced tomatoes; let simmer for about 5–7 minutes.
  6. Remove baked sweet potatoes from the oven and slice them lengthwise. Gently mash the flesh to create space for filling.
  7. Spoon the turkey mixture into each sweet potato half and top with cheese if desired. Return to the oven for another 5 minutes until the cheese melts.
  8. Serve warm garnished with fresh cilantro and a dollop of Greek yogurt.
