  • 140g brown sugar
  • 110g coconut oil or sunflower oil
  • 170g pumpkin puree
  • 200g all-purpose flour
  • 2 tsp baking powder
  • 3 tsp pumpkin spice
  • 100g powdered sugar
  • 2 tbsp milk
  • 2 tbsp maple syrup

Instructions

  1. Preheat your oven to 175°C (350°F). Grease and flour a small springform pan (20-22 cm).
  2. In a mixing bowl, beat the eggs and brown sugar until fluffy. Add in the coconut oil, pumpkin puree, and vanilla extract, mixing well.
  3. In another bowl, whisk together the flour, baking powder, and pumpkin spice. Gradually add this dry mixture to the wet ingredients and combine until just mixed.
  4. Pour the batter into the prepared springform pan and bake for about 25 minutes, then cover and bake for an additional 20 minutes or until a toothpick comes out clean.
  5. Let cool before removing from the pan.
  6. For the glaze, mix the powdered sugar with milk and maple syrup until smooth, adding just enough milk to achieve a thick consistency.
  7. Spread the glaze over the cooled cake and serve.
