  • 1 slice sourdough or whole-grain bread, toasted
  • ripe avocado, diced
  • 2 soft-boiled eggs, halved
  • 40g feta cheese, cubed
  • 45 cherry tomatoes, sliced
  • 34 green olives
  • Fresh parsley, chopped
  • Salt & freshly cracked black pepper, to taste

Instructions

  1. Boil the eggs for about 6-7 minutes for a soft yolk. Once done, cool them under cold water before peeling and halving.
  2. Lightly toast the sourdough or whole-grain bread until golden brown and crisp.
  3. Spread the diced avocado evenly over the toasted bread.
  4. Top with halved soft-boiled eggs, followed by cubes of feta cheese, sliced cherry tomatoes, and green olives.
  5. Sprinkle salt and freshly cracked black pepper over the assembled toast. Finish by garnishing with chopped fresh parsley before serving.
