2 medium chicken breasts, thinly sliced
1 teaspoon smoked paprika
1 teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon cayenne pepper (optional)
Salt and pepper, to taste
2 tablespoons olive oil
½ cup unsalted butter
4 cloves garlic, minced
1 teaspoon Dijon mustard
1 teaspoon lemon juice
½ teaspoon red pepper flakes
1 teaspoon Italian seasoning
1 tablespoon fresh parsley, chopped (plus more for garnish)
12 oz linguine pasta
1 teaspoon salt (for boiling water)
Instructions
In a small bowl, combine smoked paprika, garlic powder, onion powder, cayenne pepper (if using), salt, and pepper. Season the chicken slices with the spice mix.
Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4–5 minutes per side until golden and fully cooked. Remove from skillet and set aside.
Bring a large pot of salted water to a boil. Cook linguine according to package directions until al dente. Reserve ½ cup of pasta water, then drain the remaining water.
In the same skillet used for the chicken, melt the butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Stir in Dijon mustard, lemon juice, red pepper flakes, Italian seasoning, and parsley. Let the sauce simmer for 1–2 minutes. Season with salt and pepper to taste.
Add cooked pasta to the skillet and toss to coat in the cowboy butter sauce. If the sauce is too thick, add reserved pasta water gradually until desired consistency is reached. Slice cooked chicken and return it to the pan. Toss everything together evenly.
