  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp dried thyme
  • 2 cups fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 3 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup chicken broth
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a baking dish or line it with parchment paper.
  2. In a large skillet over medium heat, heat olive oil and season the chicken with salt, pepper, and thyme. Cook for 5-6 minutes on each side until golden brown. Remove from skillet.
  3. In the same skillet, sauté garlic until fragrant. Add mushrooms and cook until softened. Stir in spinach until wilted.
  4. Pour in heavy cream and chicken broth; simmer until the sauce thickens slightly.
  5. Place cooked chicken in the baking dish and pour the creamy sauce over it. Top with mozzarella and Parmesan cheese.
  6. Bake for 15-20 minutes until cheese is melted and bubbly.
