  • 4 medium Zucchini
  • 2 Eggs
  • 1/4 cup Parmesan Cheese (grated)
  • 1 lb. Ground Turkey
  • 2 cups Marinara Sauce
  • 2 cups Mozzarella Cheese (shredded)
  • 1 Bell Pepper (chopped)
  • 1 Yellow Onion (chopped)
  • 4 cloves Garlic (minced)

Instructions

  1. Preheat your oven to 400°F.
  2. Grate the zucchini and drain excess moisture using a colander.
  3. In a mixing bowl, combine drained zucchini, eggs, parmesan cheese, black pepper, onion powder, and half of the Italian seasoning; mix well.
  4. Press the mixture into a greased 9×13 baking pan and bake for 20 minutes.
  5. Sauté chopped bell pepper and onion in olive oil until softened; add minced garlic.
  6. Cook ground turkey until browned; stir in marinara sauce and remaining seasoning.
  7. Spread turkey mixture over baked crust; top with mozzarella cheese.
  8. Bake for an additional 20 minutes until cheese is melted and bubbly.
