  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • ½ cup vegetable oil
  • 1 ½ cups granulated sugar
  • 2 teaspoons vanilla extract
  • 2 cups shredded zucchini
  • Optional: ½ cup chopped walnuts

Instructions

  1. Preheat your oven to 350°F and prepare a 9×13" baking pan by lining it with foil and spraying with cooking spray.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt. Set aside.
  3. In another bowl, mix vegetable oil, sugar, and vanilla until combined. Gradually add dry ingredients and fold in shredded zucchini.
  4. If the batter is too dry, add water gradually until thick but not wet.
  5. Spread the batter evenly into the pan and bake for 25-30 minutes or until brownies spring back when touched.
  6. Prepare the frosting while cooling: whisk melted butter, cocoa powder, powdered sugar, milk, and vanilla until smooth.
  7. Once cooled slightly, spread frosting over brownies and cut into squares.
