  • 240ml of dairy-free milk
  • 1 teaspoon of apple cider vinegar
  • 210g of self-raising flour
  • 50g of cocoa powder
  • 100g of caster sugar
  • 1/2 teaspoon of baking powder
  • 1/2 teaspoon of bicarbonate of soda
  • 60ml of sunflower oil
  • 210g of dairy-free block butter
  • 200g of icing sugar
  • 20ml of aquafaba (chickpea brine)
  • 4 ground Oreo crumbs
  • 100g of dairy-free dark chocolate
  • White chocolate buttons
  • 1 pack of Oreo cookies

Instructions

  1. Preheat oven to 180°C (350°F).
  2. In a bowl, combine dairy-free milk and apple cider vinegar; let sit for 5 minutes.
  3. In another bowl, mix self-raising flour, cocoa powder, caster sugar, baking powder, and bicarbonate of soda.
  4. Add dry mixture and sunflower oil to milk mixture; stir until just combined.
  5. Line a cupcake tray with liners and fill each about two-thirds full with batter.
  6. Bake for 20-25 minutes or until a toothpick comes out clean.
  7. For frosting, beat dairy-free butter until creamy; add icing sugar and aquafaba until fluffy.
  8. Frost cooled cupcakes, sprinkle with crushed Oreos, and decorate with melted dairy-free chocolate and white chocolate buttons.
