  • 3 large eggs
  • 1/2 cup sour cream
  • 1 teaspoon lemon juice
  • 1/4 cup unsalted butter, browned

Instructions

  1. Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. In a bowl, combine graham cracker crumbs, sugar, and salt. Mix in melted butter until crumbly; press into the bottom of the pan. Chill while preparing the filling.
  3. Beat softened cream cheese until smooth. Gradually add sugar and flour; mix well.
  4. Incorporate vanilla bean paste and extract; then add eggs one at a time with mixing after each addition.
  5. Stir in sour cream and lemon juice until smooth.
  6. Prepare brown butter by melting it in a saucepan until golden brown with a nutty aroma; let cool slightly before adding to the batter.
  7. Pour filling into the crust and bake for about 55–60 minutes until edges are set but center jiggles slightly.
  8. Turn off the oven and leave cheesecake inside for an hour to cool gradually before refrigerating for at least four hours or overnight.
