  • 1 large yellow onion, diced

  • 2 cans Great Northern beans, drained
  • 2 cups fresh baby spinach
  • ½ cup heavy whipping cream

  2. Add diced onion, celery, and carrots. Sauté until softened (3–5 minutes), then stir in minced garlic for another minute.
  3. Mix in tomato paste, Italian seasoning, crushed red pepper, and black pepper.
  4. Pour in chicken broth and rinsed beans; bring to a simmer and cook for 6–7 minutes until vegetables are tender.
  5. Stir in heavy cream and fresh spinach; cook until spinach wilts (about 5 minutes).
  6. Serve warm with parsley garnish.
