  • 1 medium onion (diced)
  • 2 pounds ground beef (or beef chuck cubes)
  • 2 tablespoons diced garlic
  • 2 cans crushed tomatoes (14 ounce each)
  • 2 cans red kidney beans (15 ounce each)
  • Italian seasoning
  • chili powder
  • smoked paprika
  • cumin
  • 1 tablespoon brown sugar
  • 1 tablespoon vinegar
  • black pepper
  • kosher salt
  • 1/4 cup jalapenos (sliced and seeded)
  • 1/8 teaspoon crushed red pepper flakes
  • 2 tablespoons masa harina
  • sour cream (optional)
  • shredded cheese (optional)
  • tortilla chips (optional)
  • avocado slices (optional)

Instructions

  1. Heat the canola oil in a Dutch oven over medium heat. Sauté the diced onion for 3–5 minutes until soft, then add garlic and ground beef. Cook until browned.
  2. Reduce heat to medium-low and incorporate Italian seasoning, chili powder, smoked paprika, cumin, brown sugar, vinegar, crushed tomatoes, beans, and remaining spices. Mix well.
  3. Simmer for about 10 minutes. Stir in masa harina to thicken and cook for an additional 10 minutes.
  4. Serve hot with desired toppings.
