  • 2 tablespoons butter
  • 1 cup dark brown sugar
  • 2 large eggs
  • 2 cups unbleached all-purpose flour
  • ½ cup butter (for the caramel sauce)
  • 1 cup brown sugar (for the caramel sauce)
  • ½ cup cream (for the caramel sauce)
  • kosher salt (for the caramel sauce)

Instructions

  1. Preheat the oven to 350°F and lightly butter an 11 x 8-inch glass casserole dish.
  2. In a bowl, combine chopped dates with baking soda. Heat milk in a saucepan until scalded; pour over dates and let cool for 15 minutes.
  3. Mix flour, baking powder, and salt in one bowl. In another bowl, beat eggs and combine them with brown sugar, butter, and vanilla in a food processor until smooth.
  4. Gradually add dry ingredients to the wet mixture, then blend in the soaked dates until combined.
  5. Pour batter into the prepared dish and bake for about 30 minutes until set.
  6. For the caramel sauce, melt butter in a saucepan, stir in brown sugar and salt until dissolved, then add cream and simmer for about 10 minutes.
  7. Once baked, poke holes in the pudding and pour one-third of the sauce over it. Let it rest for 15 minutes before serving with additional caramel sauce and whipped cream.
