  • 1 cup red lentils
  • 4 tbsp avocado oil (or olive oil)
  • 4 cloves garlic, minced
  • 2 inches fresh ginger, minced
  • 2 serrano peppers, minced
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 can (14 oz) crushed tomatoes
  • 1 tsp ground cumin
  • 1 tsp cayenne pepper
  • ½ tsp ground coriander
  • 2 tsp curry powder
  • 1 tsp garam masala
  • 1 tsp ground turmeric
  • 1 tsp kosher salt (use more as needed)
  • 1 tsp freshly cracked black pepper
  • 1 tbsp lemon juice
  • ½ cup fresh cilantro, roughly chopped

Instructions

  1. Rinse the red lentils under cold water until clear and soak them for at least 6 hours.
  2. In a large skillet over medium-high heat, heat the avocado oil. Add garlic, ginger, and serrano peppers; sauté for about 3 minutes.
  3. Stir in the spices (cumin, cayenne pepper, coriander, curry powder, garam masala, turmeric), cooking for an additional minute until fragrant.
  4. Add the soaked lentils along with crushed tomatoes and coconut milk. Mix well.
  5. Lower the heat to a simmer and partially cover the skillet; cook for 20-25 minutes until lentils are tender.
  6. Stir in lemon juice and cilantro before serving warm with rice or flatbread.
