  • 1 lb chicken breast or shrimp
  • 2 tablespoons olive oil
  • 1 red bell pepper
  • 1 green bell pepper
  • 3 cloves garlic
  • 2 teaspoons Cajun seasoning
  • ½ teaspoon smoked paprika
  • ½ teaspoon red pepper flakes
  • ¼ teaspoon cayenne pepper
  • 1 ½ cups heavy cream
  • ½ cup grated Parmesan cheese
  • Salt and black pepper, to taste
  • Fresh parsley or cilantro, chopped
  • Juice of ½ lime
  • ½ cup reserved pasta water

Instructions

  1. Cook the penne pasta in salted water until al dente; reserve ½ cup of pasta water before draining.
  2. In a skillet, heat 1 tablespoon of olive oil over medium-high heat. Season the chicken or shrimp with salt, pepper, and Cajun seasoning; sear until cooked through and set aside.
  3. In the same skillet, add remaining olive oil and sauté sliced bell peppers and minced garlic for about 3–4 minutes until softened.
  4. Add spices to the veggies; toast briefly before pouring in heavy cream. Stir in Parmesan cheese until melted and creamy.
  5. Combine the cooked pasta and protein into the sauce; use reserved pasta water to achieve desired consistency.
  6. Adjust seasoning to taste before garnishing with fresh herbs and lime juice. Serve hot.
