  • 8 ounces ramen noodles
  • 1/3 cup chopped green onion (white/light green part)
  • 1 tablespoon fresh grated ginger
  • 1 tablespoon minced garlic
  • 1 tablespoon oil
  • 1/4 cup low sodium soy sauce or tamari
  • 2 tablespoons chili garlic sauce
  • 1 tablespoon sriracha (adjust to taste)
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon rice vinegar
  • 2 teaspoons toasted sesame oil
  • 1/2 teaspoon red pepper flakes

Instructions

  1. Cook the ramen noodles in boiling water according to package instructions until al dente.
  2. In a saucepan, sauté chopped green onion, ginger, garlic, and oil for about 3-5 minutes until fragrant.
  3. Add remaining sauce ingredients to the saucepan and whisk together; simmer over low heat for about 5 minutes.
  4. Drain the cooked noodles and add them to the saucepan; mix well and let simmer briefly to blend flavors.
  5. Adjust seasoning as needed before serving hot, garnished with green onion, cilantro, and extra red pepper flakes if desired.
