  • 1 salmon fillet
  • 1 tsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • Salt & pepper to taste
  • 1012 baby potatoes
  • 1 tbsp butter
  • 1 garlic clove, minced
  • 1 tbsp fresh dill (or parsley), chopped
  • Salt & pepper to taste
  • 23 large eggs
  • Ripe avocado, sliced
  • Pinch of salt

Instructions

  1. Boil baby potatoes in salted water for 12-15 minutes until fork-tender. Drain and toss with butter, minced garlic, dill (or parsley), salt, and pepper.
  2. For the eggs, boil for 7 minutes for jammy yolks or 9 minutes for firmer yolks. Place in ice water to cool before peeling.
  3. Season the salmon with smoked paprika, garlic powder, salt, and pepper. Heat olive oil in a skillet over medium-high heat and sear the salmon for about 4-5 minutes per side until golden brown.
  4. Serve by arranging potatoes, sliced soft-boiled eggs, seared salmon, and avocado on a plate.
