  • 1 medium onion (diced)
  • 1 medium red bell pepper (chopped)
  • 34 garlic cloves (minced)
  • 1 tsp ground cumin
  • 1 tsp sweet paprika
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika
  • 1/2 cup green olives (optional)
  • 1 1/2 cups white rice (uncooked)
  • 1 can kidney beans (drained and rinsed)
  • 1 1/4 cups vegetable broth
  • 1 1/4 cups salsa

Instructions

  1. Soak the rice in cold water for at least 10 minutes; drain.
  2. In a large skillet or pot, heat oil over medium heat. Sauté onion and bell pepper until softened, about three minutes.
  3. Add minced garlic and spices; sauté for another minute until fragrant.
  4. Stir in soaked rice, salsa, and vegetable broth; bring to a boil.
  5. Cover and simmer on low heat for about 15–20 minutes without stirring.
  6. Once cooked, turn off the heat and stir in kidney beans and olives if using. Adjust seasonings before serving.
