  • 850g medium apples (peeled, cored, and diced)
  • 125g pecan halves
  • 280g brown sugar
  • 190g unsalted butter (room temperature)
  • 30g unsalted butter (for apple filling)
  • 80g granulated sugar (for apple filling)
  • 1/2 tsp ground cinnamon (for apple filling)
  • 1/4 tsp kosher salt (for apple filling)
  • 1 Tbsp corn starch (for apple filling)
  • 115g unsalted butter (for frosting)
  • 225g cream cheese (at room temperature)
  • 250g powdered sugar (sifted)
  • 12 Tbsp heavy whipping cream (for frosting)
  • 1/2 tsp kosher salt (for frosting)

Instructions

  1. Prepare the dough: Combine lukewarm milk and sugar in a bowl; sprinkle yeast on top and let sit until foamy. Add eggs and salt, then gradually mix in flour and softened butter until a soft dough forms. Knead on a floured surface for about 5 minutes until smooth. Let it rise in a greased bowl covered with a towel until doubled in size (about 1 hour).
  2. Make the apple filling: In a pan over medium heat, melt butter, add diced apples with sugar, cinnamon, salt, and corn starch; cook until apples are tender (about 5-7 minutes). Remove from heat to cool.
  3. Roll out the dough: Punch down risen dough and roll it into a large rectangle on a floured surface. Spread softened butter over the dough.
  4. Assemble rolls: Sprinkle brown sugar mixture over the dough, then layer cooked apple filling and pecans evenly. Roll tightly from one end to create a log shape.
  5. Slice & bake: Cut roll into equal pieces (about 12), place on a lined baking sheet, cover with towel to rise again for about 30 minutes. Preheat oven to 350°F (175°C) and bake for about 25-30 minutes or until golden brown.
  6. Make frosting: Beat together softened butter and cream cheese in an electric mixer until smooth; gradually add sifted powdered sugar while mixing.
  7. Frost & serve: Drizzle cream cheese frosting over slightly cooled rolls before serving.
