  • 1 large onion, diced
  • 4 garlic cloves, minced
  • 1 tbsp ginger, grated
  • 1 tbsp curry powder
  • 1 tsp ground cumin
  • 1 tsp turmeric
  • 1 tsp paprika
  • 1/2 tsp chili powder (optional)
  • 1 can (14 oz) coconut milk
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup beef broth
  • 1 tbsp tomato paste
  • Salt and pepper to taste
  • 2 tbsp oil (for browning)

Instructions

  1. Prepare all ingredients by dicing the onion, mincing the garlic, grating the ginger, and chopping the beef.
  2. Heat oil in a skillet over medium heat. Brown the beef cubes on all sides for about 5–7 minutes and set aside.
  3. In the same skillet, sauté onions, garlic, and ginger until softened (about 3–4 minutes). Stir in curry powder and other spices until fragrant.
  4. Transfer browned beef and sautéed aromatics to a slow cooker. Add coconut milk, diced tomatoes, beef broth, salt, and pepper; mix well.
  5. Cover and cook on low for 6–8 hours or high for 3–4 hours until the beef is tender.
  6. Serve hot with garlic naan.
