  • 9 Roma tomatoes
  • 3 tbsp extra virgin olive oil
  • 2 tbsp unsalted butter
  • 1 yellow onion
  • 4 garlic cloves
  • 1 tbsp fresh thyme
  • 1 tsp Kosher salt
  • ½ tsp ground black pepper
  • 1 can (28 oz) crushed San Marzano tomatoes
  • 1 cup fresh basil
  • 1 tbsp sugar
  • 2 cups chicken stock
  • 2/3 cup heavy cream

Instructions

  1. Preheat oven to 375°F.
  2. Slice Roma tomatoes in half, place on a baking sheet, drizzle with olive oil, and season with salt and pepper.
  3. Roast tomatoes for about 1 hour until caramelized; set aside.
  4. In a large pot, heat butter and remaining olive oil over medium-high heat. Sauté diced onion for about 5 minutes until softened.
  5. Add minced garlic and thyme; cook until fragrant (about 1 minute).
  6. Stir in crushed tomatoes, basil, and sugar. Simmer for 10 minutes.
  7. Pour in chicken stock and add roasted tomatoes; simmer for another 30 minutes.
  8. Blend soup until smooth using an immersion blender or regular blender (in batches).
  9. Stir in heavy cream until well combined.
  10. Serve warm, optionally garnished with mini croutons or additional basil.
