  • 500 g pumpkin (about 3 cups), diced
  • 2 garlic bulbs
  • 2 sprigs rosemary
  • 3 tbsp extra virgin olive oil
  • 1/2 cup white apple vinegar
  • 2 cups small pasta
  • 3 cups chicken or vegetable stock
  • 50 g grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 200°C (390°F).
  2. Trim the tops off the garlic bulbs and place them alongside the diced pumpkin and rosemary in a large oven-proof dish. Drizzle with olive oil and season with salt and pepper.
  3. Roast for about 45 minutes until the pumpkin is tender and caramelized.
  4. In a stove top-safe pot, combine the roasted ingredients with chicken stock, white apple vinegar, and pasta. Bring to a boil, then reduce heat and simmer for about 15 minutes, or until pasta is cooked al dente.
  5. Stir in grated Parmesan cheese until melted. Serve immediately.
