  • 1 large head cauliflower (45 cups florets)
  • 3 tablespoons olive oil
  • 1 head garlic
  • 1 medium yellow onion, diced
  • 4 cups vegetable broth
  • 1 heaping cup shredded sharp cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss cauliflower florets with 1-2 tablespoons of olive oil, salt, and pepper. Prepare garlic by trimming the tops of the cloves and wrapping it in foil with olive oil.
  3. On the baking sheet, roast cauliflower and garlic for 30-35 minutes until golden.
  4. In a medium pot, heat remaining olive oil over medium heat. Sauté diced onion until translucent.
  5. Blend roasted veggies with sautéed onion, vegetable broth, salt, and pepper until smooth. Return to pot and stir in cheddar cheese; simmer for 10-15 minutes before serving.
