  • Salt and freshly ground black pepper
  • 1/4 cup honey
  • 3 tbsp soy sauce
  • 4 cloves garlic, minced
  • 8 cloves whole garlic, peeled

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Pat the lamb shoulder dry, season generously with salt and pepper, and rub minced garlic over the surface.
  3. In a bowl, whisk together honey and soy sauce until combined.
  4. Place the seasoned lamb in a roasting pan and pour half of the glaze over it; scatter whole garlic cloves around.
  5. Roast for 2 to 2.5 hours or until internal temperature reaches 145°F (63°C), basting every 30 minutes with its juices.
  6. Pour remaining glaze over lamb during the last 15 minutes of cooking, then let it rest for 15 minutes before carving.
