  • 2 tablespoons olive oil
  • 1 large onion (diced)
  • 2 stalks celery (diced)
  • 2 carrots (diced)
  • 3 cloves garlic (crushed)
  • 2 cups red apple vinegar
  • 3 cups beef broth
  • Bay leaves and fresh herbs (thyme, oregano)

Instructions
