  • 1/2 cup pumpkin puree

  • 1/2 cup brown sugar
  • 1/4 cup chopped pecans
  • 1 1/2 cups very hot water

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, combine flour, baking powder, salt, granulated sugar, and spices.
  3. In another bowl, mix pumpkin puree, milk, melted butter (or oil), and vanilla until smooth. Add to the dry ingredients and stir until just combined.
  4. Pour the batter into an 8-inch casserole dish.
  5. Mix granulated sugar, brown sugar, and chopped pecans; sprinkle over the batter.
  6. Carefully pour very hot water over the mixture without stirring.
  7. Bake for approximately 40 minutes or until set in the middle.
