  • 4 mini pumpkins or ramekins
  • 2 cups heavy cream
  • 1/3 cup granulated sugar (plus extra for topping)
  • 4 large egg yolks
  • 1 tsp vanilla extract
  • 1 cup pumpkin puree
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 325°F (160°C). Hollow out mini pumpkins or prepare ramekins in a baking dish.
  2. In a saucepan, heat heavy cream and granulated sugar over medium heat until hot but not boiling. Remove from heat.
  3. Whisk egg yolks, vanilla extract, pumpkin puree, spices, and salt in a separate bowl until smooth.
  4. Gradually mix the warm cream into the pumpkin mixture while whisking continuously.
  5. Pour into prepared containers, place them in the baking dish, and fill with hot water halfway up the sides. Bake for about 30 minutes or until slightly jiggly in the center.
  6. Cool at room temperature, then refrigerate for at least two hours before serving. Caramelize sugar on top using a kitchen torch just before serving.
