  • 1/2 cup unsalted butter (divided)
  • 1 cup packed brown sugar
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract (divided)
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup whole milk

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a medium saucepan over medium heat, melt 1/2 cup butter, then stir in brown sugar, heavy cream, half the vanilla extract, and salt until smooth. Remove from heat and let cool slightly.
  3. Arrange pecans in the bottom of the prepared pan and pour the caramel mixture over them.
  4. In a medium bowl, whisk together flour, baking powder, and salt. In another mixing bowl, cream remaining butter and granulated sugar until fluffy. Add eggs one at a time, beating well after each addition, then stir in remaining vanilla.
  5. Gradually combine dry ingredients with wet ingredients alternating with milk until just combined.
  6. Pour batter over pecan topping and smooth out the surface.
  7. Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
  8. Let cool for about 5 minutes before inverting onto a serving plate.
