  • 14 oz chicken sausage, sliced into ¼-inch rounds
  • 3 cups elbow macaroni
  • 3½ cups chicken broth
  • 1 cup whole milk
  • 2 cloves garlic, minced
  • 2 cups shredded sharp cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chicken sausage and cook for 4-5 minutes until browned; remove and set aside.
  2. In the same pot, sauté minced garlic for 30 seconds until fragrant.
  3. Add elbow macaroni, chicken broth, milk, smoked paprika, black pepper, and salt. Stir to combine and bring to a gentle boil; reduce heat and simmer for 8-10 minutes until pasta is tender.
  4. Stir in cheddar cheese, mozzarella cheese, and butter until melted and creamy.
  5. Return the browned sausage to the pot; heat through for about 1-2 minutes.
