  • 1 lb sirloin steak
  • 3 tbsp olive oil
  • 2 garlic cloves (minced)
  • 1 tbsp lemon juice (fresh)
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 cups cooked grains (brown rice, quinoa, or cauliflower rice)
  • 1 cup roasted chickpeas (optional)
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (diced)
  • ½ red onion (thinly sliced)
  • ½ cup kalamata olives (pitted)
  • ⅓ cup feta cheese (crumbled; optional)
  • ¼ cup fresh herbs (parsley or dill, chopped)
  • 1 cup Greek yogurt (plain; coconut yogurt for dairy-free)
  • ½ cucumber (grated, squeezed dry)
  • 1 tbsp lemon juice (fresh)
  • 1 garlic clove (minced)
  • 1 tbsp fresh dill (chopped)
  • salt & pepper (to taste)
  • 3 tbsp olive oil
  • 2 tbsp lemon juice (fresh)
  • 1 tsp honey (omit for Whole30)

Instructions

  1. Mix all marinade ingredients in a bowl. Coat the sirloin steak well with the marinade. Cover and let it marinate in the refrigerator for at least 30 minutes and up to 4 hours.
  2. In another bowl, combine Greek yogurt, grated cucumber, lemon juice, minced garlic, chopped dill, salt, and pepper. Stir until smooth. Chill in the fridge while you cook the steak.
  3. Whisk together olive oil, lemon juice, honey, minced garlic, dried oregano, salt, and pepper until emulsified. Set aside.
  4. Heat a skillet over medium-high heat. Sear the marinated steak for about 4–5 minutes per side until desired doneness is reached. Remove from heat and let it rest before slicing thinly against the grain.
  5. In serving bowls, layer cooked grains as a base. Top with sliced steak and your choice of toppings such as cherry tomatoes, cucumbers, red onion, olives, chickpeas, feta cheese if desired, and fresh herbs. Finish with a generous dollop of tzatziki sauce and drizzle with vinaigrette before serving.
