  • 1/2 cup Onion, diced
  • 1/2 cup Breadcrumbs
  • 1 large Egg
  • 2 1/4 cups Milk (for meatloaf and cheese sauce)
  • 2 cups Macaroni, uncooked
  • 2 cups Cheddar Cheese, shredded
  • 2 tbsp Butter
  • 2 tbsp Flour
  • 1.5 tsp Salt (combined)
  • 3/4 tsp Pepper (combined)
  • 1/2 tsp Paprika
  • 1/2 tsp Dry Mustard

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine ground beef, onion, breadcrumbs, egg, milk (1/4 cup), salt (1 tsp), and pepper (1/2 tsp). Mix until well combined.
  3. Press the meat mixture into a greased baking dish (9×13 inches) and bake for about 20 minutes.
  4. Meanwhile, cook the macaroni according to package instructions; drain and set aside.
  5. For the cheese sauce, melt butter in a saucepan over medium heat. Stir in flour and cook for one minute. Gradually whisk in milk (2 cups) until thickened, then add salt (1/2 tsp), pepper (1/4 tsp), paprika, dry mustard, and stir in cheddar cheese until melted.
  6. Toss cooked macaroni with the cheese sauce until fully coated. Pour over the partially baked meatloaf and sprinkle remaining cheese on top.
  7. Bake again for an additional 25 minutes or until bubbly.
