  • 1 cup packed brown sugar
  • 1/2 cup evaporated milk
  • 8 tbsp unsalted butter (divided)
  • 1/4 cup boiling water
  • 1 1/2 cups toasted pecans
  • 1 cup granulated sugar

Instructions

  1. Prepare a baking sheet by lining it with aluminum foil or a silicone mat, then spray with nonstick cooking spray.
  2. In a medium saucepan over medium heat, combine white sugar, brown sugar, and evaporated milk. Stir until smooth and sugars dissolve.
  3. Insert a candy thermometer and cook the mixture until it reaches 240°F (soft ball stage), stirring occasionally.
  4. Remove from heat and add cubes of butter without stirring immediately. Let sit for 1 minute before adding vanilla extract and pecans.
  5. Stir constantly until the mixture thickens and lightens in color; drop spoonfuls onto the prepared baking sheet while still warm.
  6. Allow pralines to cool at room temperature for about 30 minutes.
