  • 1/4 cup granulated sugar

Instructions

  1. Whisk together flour, powdered sugar, and salt in a large bowl. Cut in chilled butter until crumbly.
  2. Form the dough into a ball, wrap in plastic wrap, and chill for at least 30 minutes.
  3. Preheat oven to 350°F (175°C). Roll out the dough to about 1/8-inch thickness and cut into circles.
  4. Bake cookies on parchment-lined sheets for 8-10 minutes until lightly golden. Let cool completely.
  5. In a saucepan, combine lemon juice, granulated sugar, egg yolk, cornstarch, and zest. Cook over medium heat until thickened; let cool completely.
  6. Beat egg whites with cream of tartar until soft peaks form; gradually add sugar until stiff peaks form.
  7. Assemble cookies by adding lemon filling to each and topping with meringue.
  8. Broil for 1-2 minutes until meringue is lightly golden.
