  • 2 lb beef chuck stew meat (cut into 1-inch pieces)
  • 1 lb celery root (peeled & cubed)
  • 6 cups beef bone broth
  • 1 medium onion (diced)
  • 2 medium carrots (peeled, sliced)
  • 2 cloves garlic (minced)
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Season the beef with sea salt and black pepper.
  2. Heat 1 tablespoon of olive oil in a Dutch oven over medium heat. Add the beef in batches and sear until browned on all sides, about 8-10 minutes. Remove and set aside.
  3. In the same pot, heat remaining olive oil and sauté onions and carrots until softened, about 10 minutes.
  4. Stir in garlic and Italian seasoning; cook for another minute.
  5. Return the beef to the pot and add broth, diced tomatoes, and bay leaves. Bring to a boil.
  6. Reduce heat to medium-low, cover, and simmer for 45-60 minutes until the beef is tender.
  7. Add celery root; increase heat to boil again. Cover and simmer for an additional 15 minutes until tender.
  8. Remove bay leaves before serving. Adjust seasonings as necessary.
