  • 1 cup light brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract

  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg (optional)
  • 1/2 teaspoon salt
  • 3 cups old-fashioned rolled oats
  • 2 cups powdered sugar, sifted
  • 34 tablespoons milk or cream
  • 1 teaspoon vanilla extract for icing
  • Pinch of salt for icing

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×13 inch baking pan.
  2. In a mixing bowl, cream together softened butter, light brown sugar, and granulated sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  4. In another bowl, whisk together flour, baking soda, cinnamon, nutmeg (if using), and salt. Gradually mix into wet ingredients until just combined.
  5. Gently fold in rolled oats until evenly distributed in the dough.
  6. Pour batter into the prepared baking pan and spread evenly. Bake for 25-30 minutes or until golden brown around the edges. Let cool completely before icing.
  7. For icing, mix sifted powdered sugar with milk or cream until smooth; add vanilla extract.
