  • 1/2 cup honey
  • 1/4 cup olive oil
  • 2 tablespoons red apple vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon red pepper flakes
  • Salt and pepper, to taste
  • 1 cup crumbled feta cheese
  • Fresh parsley, chopped (for garnish)
  • 1 lemon, sliced (for serving)

Instructions

  1. In a medium bowl, whisk together honey, olive oil, vinegar, garlic, oregano, red pepper flakes, salt, and pepper until well combined.
  2. Marinate the chicken in the mixture for at least 30 minutes (ideally 2 to 4 hours) in a resealable bag or shallow dish.
  3. Preheat the oven to 400°F (200°C). Prepare a baking dish.
  4. Remove the chicken from the marinade and place it in the baking dish. Discard any remaining marinade.
  5. Spoon crumbled feta cheese evenly over each chicken breast.
  6. Bake for 25 to 30 minutes until cooked through (internal temperature of 165°F) and feta is bubbly.
  7. Let rest for 5 minutes before serving with lemon wedges and garnish with parsley.
