  • 2 large eggs
  • 1/2 cup canola or vegetable oil
  • 1/2 cup unsalted butter (room temperature)
  • 2 1/4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 jar vegan marshmallow crème
  • 3/4 cup semi-sweet chocolate chips
  • 1/4 cup heavy cream

Instructions

  1. Preheat your oven to 350°F and line two cookie sheets with parchment paper.
  2. In a mixing bowl, combine the cake mix, eggs, and oil until a soft dough forms. Scoop the dough onto the baking sheets, spacing them 2 inches apart.
  3. Bake for 8-10 minutes until edges are set; cool on the baking sheet for 5 minutes before transferring to a wire rack.
  4. For the frosting, beat room temperature butter in a bowl until creamy, then mix in powdered sugar, vanilla extract, salt, and fold in vegan marshmallow crème. Reserve some for decoration.
  5. Prepare ganache by microwaving heavy cream over chocolate chips for about 45 seconds; whisk smooth after resting.
  6. Frost cooled cookies with the marshmallow frosting and chill for about 10 minutes.
  7. Drizzle cooled ganache over each cookie and pipe reserved frosting on top in a squiggle pattern.
