  • 1/4 cup breadcrumbs
  • 1 egg
  • 2 tablespoons finely chopped onion
  • 2 cloves garlic, minced
  • 1/3 cup honey
  • 1/4 cup soy sauce
  • 1 cup uncooked white rice
  • 2 cups chicken broth
  • 1 tablespoon olive oil or butter
  • 1/2 cup diced bell peppers (any color)
  • 1/2 cup frozen peas (no need to thaw)
  • 1/4 cup chopped green onions (optional, for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a baking dish.
  2. In a large bowl, combine the meat, breadcrumbs, egg, onion, garlic, soy sauce, pepper, and salt. Form into small meatballs.
  3. Sear the meatballs in a skillet over medium heat until browned.
  4. Prepare the honey garlic sauce by heating honey, soy sauce, ketchup, water, and garlic in a saucepan until bubbling.
  5. Assemble by spreading rice in the baking dish, adding vegetables and broth. Nestle meatballs on top and pour sauce over everything.
  6. Cover with foil and bake for 40 minutes. Remove foil and bake an additional 10–15 minutes until cooked through.
