  • 1 lb boneless, skinless chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup mixed vegetables (optional)

Instructions

  1. Season chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Heat a skillet over medium heat and sear chicken for 3–4 minutes on each side until golden brown. Remove from skillet.
  3. In a bowl, mix BBQ sauce and honey together.
  4. In the same skillet, toast uncooked rice for 1–2 minutes.
  5. Add chicken broth and half of the BBQ mixture to the skillet; stir well.
  6. Return chicken to the skillet and pour remaining BBQ sauce over it. Cover and simmer on low for 15 minutes.
  7. If using vegetables, stir them in during the last 5 minutes of cooking until everything is tender.
  8. Allow to sit for 5 minutes before serving.
