  • 12 tablespoons very cold unsalted butter, diced into cubes
  • ½ cup very cold heavy cream
  • 2 large eggs, divided
  • 2 cups all-purpose flour, plus more for rolling out scones
  • ¼ cup granulated sugar
  • 1 tablespoon baking powder
  • 1 tablespoon chai spice blend
  • ½ teaspoon kosher salt
  • 1 heaping cup powdered sugar
  • 2 teaspoons chai spice blend
  • 1 teaspoon vanilla extract
  • 3 tablespoons heavy cream
  • 1 tablespoon maple syrup
  • pinch of kosher salt

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a food processor, combine flour, sugar, baking powder, chai spice blend, and salt. Pulse until mixed.
  3. Add the cold butter and pulse until the mixture resembles coarse crumbs.
  4. In a separate bowl, whisk together heavy cream, one egg, and egg yolk; reserve the egg white for brushing. Add this to the dry ingredients and mix until just combined.
  5. Shape the dough into a disc and chill in the freezer for 30 minutes.
  6. Roll out the dough on a floured surface and cut into desired shapes.
  7. Brush the tops with reserved egg white and bake for about 20–22 minutes or until golden brown.
  8. While baking, prepare the glaze by whisking together powdered sugar, chai spice blend, vanilla extract, heavy cream, maple syrup, and salt until smooth.
  9. Once baked, dip each scone in the glaze and allow to set before serving.
