  • 2/3 cup maple syrup or honey
  • 1/4 cup 2% Greek yogurt (plain or vanilla)
  • 1/4 cup vegetable oil
  • 1 egg
  • 2 teaspoons vanilla essence
  • 1 2/3 cups whole wheat flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, whisk together pumpkin puree, maple syrup or honey, Greek yogurt, vegetable oil, egg, and vanilla essence until smooth.
  3. In another bowl, mix whole wheat flour, ground cinnamon, ground nutmeg, baking soda, baking powder, and salt.
  4. Gradually combine the dry ingredients with the wet mixture until just mixed; avoid overmixing.
  5. Line a muffin tin with liners and fill each cup two-thirds full with batter.
  6. Bake for about 18 minutes or until a toothpick inserted comes out clean.
  7. Cool in the tin for a few minutes before transferring to a wire rack.
