  • 1.5 lbs chicken breast, cut into bite-sized pieces
  • 1/4 cup soy sauce
  • 2 tablespoons olive oil
  • 2 tablespoons honey (or brown sugar)
  • 1 teaspoon ground ginger
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 1 can (20 oz) pineapple chunks, drained
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 medium red onion, cut into wedges
  • 3 cloves garlic, minced
  • Fresh cilantro for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the chicken pieces with soy sauce, olive oil, honey or brown sugar, minced garlic, ground ginger, paprika, salt, and pepper. Mix well and let marinate for 10–15 minutes.
  3. Spread the diced bell peppers, onion wedges, and drained pineapple on a sheet pan.
  4. Place the marinated chicken over the vegetables and pour any remaining marinade on top.
  5. Bake for 25–30 minutes until the chicken reaches an internal temperature of 165°F (74°C), stirring halfway through.
  6. Garnish with fresh cilantro before serving warm over steamed rice or quinoa.
