  • 12 Lotus biscoff biscuits
  • 150g dark chocolate (melted)
  • 175g baking spread or softened unsalted butter
  • 175g caster sugar
  • 3 large eggs
  • 2 tbsp milk
  • 150g self-raising flour
  • 25g cocoa powder
  • 115g full-fat cream cheese
  • 100g unsalted butter (for frosting)
  • Green food coloring

Instructions

  1. Prepare biscuit gravestones by snapping off one end of each Lotus biscoff biscuit and dipping them in melted dark chocolate. Let them set on baking paper.
  2. Preheat your oven to 140°C Fan/160°C/325°F/Gas Mark 3 and line a cupcake tin with cases.
  3. In a bowl, whisk together softened baking spread and caster sugar until light and fluffy. Add eggs and milk, mixing well.
  4. Fold in self-raising flour, cocoa powder, and baking powder until just combined.
  5. Divide the batter among the lined cupcake cases and bake for 25–30 minutes. Cool on a wire rack.
  6. For the filling, mix cream cheese, icing sugar, and crushed Oreos until smooth; fill each cooled cupcake with this mixture.
  7. Make chocolate buttercream by mixing softened butter with cocoa powder and icing sugar; add milk as needed for consistency.
  8. Frost each cupcake with chocolate buttercream and insert the biscuit gravestones. Decorate with crushed Oreos for soil.
