  • 4 wild salmon fillets (6 oz each)
  • 1/4 tsp kosher salt
  • black pepper
  • 1/4 cup chopped red onion
  • 1 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • 2 medium vine ripe tomatoes (chopped)
  • 2 small cloves garlic (minced)
  • 2 tbsp fresh basil leaves (chopped)
  • 4 oz diced avocado (from 1 small Hass)

Instructions

  1. In a mixing bowl, combine chopped red onion, olive oil, balsamic vinegar, kosher salt, and pepper. Let sit for 5 minutes.
  2. Add chopped tomatoes, minced garlic, and basil to the bowl; season with additional salt and pepper. Allow to sit for at least 10 minutes.
  3. Preheat the grill to medium-high heat and oil the grates.
  4. Season salmon fillets with kosher salt and black pepper.
  5. Grill salmon skin-side down for about 8–10 minutes until cooked through.
  6. Remove from grill and let rest for 2–3 minutes.
