Instructions

  1. Marinate chicken in olive oil, lemon juice, Dijon mustard, minced garlic, oregano, smoked paprika, salt, and pepper for at least 30 minutes.
  2. Preheat oven to 425°F (220°C). Toss diced sweet potatoes with olive oil and spices; roast for 25–30 minutes until crispy.
  3. Grill marinated chicken on medium-high heat for 6–7 minutes per side until cooked through (internal temperature should reach 165°F/75°C).
  4. Assemble bowls with your choice of base (quinoa/rice), roasted sweet potatoes, sliced chicken, greens, and toppings.
