  • 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 2 tbsp Cajun seasoning
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 12 oz rigatoni pasta
  • 4 tbsp butter
  • 4 cloves garlic, minced
  • 1 cup all-purpose flour
  • 3 cups whole milk
  • 8 oz Velveeta cheese, cubed
  • 4 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh parsley or chives, for garnish (optional)

Instructions

  1. Cook rigatoni according to package instructions until al dente. Drain and set aside.
  2. Toss cubed chicken with olive oil, Cajun seasoning, garlic powder, and smoked paprika until well coated.
  3. Sauté seasoned chicken in a skillet over medium-high heat for 6-8 minutes until cooked through. Remove from skillet.
  4. In the same skillet, melt butter and sauté minced garlic for 1 minute.
  5. Whisk in flour to create a roux; gradually add milk while whisking until slightly thickened.
  6. Stir in Velveeta and cream cheese until melted; then add mozzarella and Parmesan.
  7. Combine chicken and rigatoni with the sauce until evenly coated.
  8. Serve hot, garnished with fresh herbs if desired.
