Instructions

  1. Prepare the zucchini by tossing it with salt in a colander and letting it sit for 10 minutes. Squeeze out excess moisture using a clean tea towel.
  2. In a mixing bowl, combine flour, beaten eggs, cheese, chives, salt, and pepper until smooth. Stir in the drained zucchini until fully mixed.
  3. Heat olive oil in a large skillet over medium-high heat. Drop tablespoonfuls of batter into the skillet, flattening each fritter slightly. Fry for about 2 minutes on each side until golden brown.
