Crockpot Spicy Queso Beef Chili is a comforting and hearty dish perfect for cold winter nights. This flavorful chili features tender beef, a rich blend of spices, and creamy cheese that come together in your slow cooker, making it an effortless choice for family dinners or gatherings.

  • 2 pounds ground beef (or ground chicken/turkey)
  • 2 yellow onions, chopped
  • 2 poblano peppers, chopped
  • 28 ounces crushed fire-roasted tomatoes
  • 3 tablespoons salted butter
  • 6 ounces cream cheese
  • 2 cups shredded cheddar cheese
  • 23 cups chicken or beef broth
  • 2 tablespoons chili powder
  • 1 tablespoon garlic powder
  • 1 tablespoon smoked paprika
  • 2 teaspoons ground cumin
  • 1/2 teaspoon cayenne pepper
  • 1 can (8 ounce) tomato paste
  • 1 can (4 ounce) diced green chilies
  • 1/3 cup hot sauce
  • 2 bay leaves
  • Salt to taste
  • 1 can mixed chili beans, drained
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup chopped green onions
  • Avocado and Greek yogurt, for serving

Instructions

  1. Chop onions and poblano peppers.
  2. In a skillet over medium heat, brown the ground meat until fully cooked; drain excess fat.
  3. Transfer the meat to the crockpot and add onions, poblanos, crushed tomatoes, butter, hot sauce, spices, bay leaves, salt, and broth.
  4. Cover and cook on low for about 120 minutes until flavors meld.
  5. Stir in softened cream cheese until melted; mix well.
  6. Serve topped with cheddar cheese and desired toppings.
