  • 3 lbs boneless, skinless chicken thighs
  • 1 cup light brown sugar
  • 1 cup soy sauce
  • ⅓ cup brewed barley tea (non-alcoholic)
  • 2 tablespoons apple cider vinegar
  • ½ teaspoon ground ginger
  • 1 tablespoon honey
  • ½ teaspoon red pepper flakes
  • 4 cloves garlic, minced
  • 3 tablespoons cornstarch (for thickening)
  • Chopped green onions (for garnish)

Instructions

  1. Place the chicken thighs in the bottom of your slow cooker.
  2. In a mixing bowl, whisk together the brown sugar, soy sauce, brewed barley tea, apple cider vinegar, ground ginger, honey, red pepper flakes, and minced garlic.
  3. Pour the sauce mixture over the chicken in the slow cooker.
  4. Cover and cook on high for 4 hours or low for 6 hours until tender.
  5. Shred the chicken using two forks and return it to the slow cooker.
  6. Mix cornstarch with water to create a slurry and pour it into the sauce. Stir well to combine.
  7. Let it cook for an additional 5–10 minutes until the sauce thickens.
  8. Garnish with chopped green onions before serving.
