  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 cup chopped spinach
  • 4 tablespoons butter
  • 1/4 cup all-purpose flour
  • 2 cups vegetable broth
  • Salt and pepper to taste

Instructions

  1. To make the béchamel sauce, melt butter in a saucepan over medium heat. Whisk in flour until smooth, then gradually add vegetable broth while stirring continuously until thickened. Season with salt and pepper.
  2. Preheat your oven to 375°F (190°C). Spread a thin layer of béchamel sauce in a 9×13 inch baking dish.
  3. Layer pre-cooked noodles over the sauce, followed by half of the chopped spinach and half of the mozzarella cheese. Repeat with remaining ingredients, finishing with Parmesan cheese on top.
  4. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15-20 minutes until bubbly and golden.
