Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 tablespoon Dijon mustard
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 2 cups cooked jasmine or basmati rice
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat and sear chicken for 5-7 minutes on each side until golden and cooked through. Remove from skillet.
  2. In the same skillet, sauté diced onion for 3-4 minutes until soft; add minced garlic and cook for another minute.
  3. Pour in chicken broth, scraping browned bits from the pan. Lower heat, stir in heavy cream, Dijon mustard, paprika, garlic powder, and onion powder; simmer for about 5 minutes.
  4. Stir in shredded cheese until melted and smooth. Return chicken to skillet and spoon sauce over top; simmer for an additional 3-4 minutes.
  5. Serve over cooked rice and garnish with chopped parsley.
